Ginger, Saffron Juice

I’m a massive tea fan, yet sometimes in the afternoons I want something cool and refreshing.

 

Cue this recipe.

 

I love doubling this recipe to make a big batch for the week, especially when I’m feeling a little under the weather, as the ginger gives it that spicey, warm kick whilst the saffron provides rich earthy undertones, that not only provides your body with antioxidants and mood boosting properties, but gives the drink its beautiful golden hue.  However, the saffron isn’t essential if it’s not available to you right now as sometimes it can be hard to get your hands on, and when you do it’s a pricey little thing! It’s delicious regardless.

Ginger Saffron Juice:

Ingredients – 

    • 4 cups (1litre) of water
    • 3 inches of ginger – grated (makes approx. 3 tbls)
    • ½ lemon juice
    • Pinch of saffron
    • 2 tsp of honey

Instructions – 

In a medium saucepan, add the water, ginger, and saffron. Cover and bring to the boil. Once boiling remove the lid, reduce heat, and simmer for 10 minutes.

Remove from the heat, add honey, and allow to cool before serving or storing in the fridge.
